Matcha & raspberry Tiramisu
Ingredients:
Freshly made Matcha tea (2 tsp Matcha powder and 3/4 cup of warm water, whisked so there are no clumps)
1 pint of heavy cream
2 tsp of vanilla paste
4 egg yolks
1/4 cup of sugar
8 oz. of mascarpone cheese
2 7 oz. packages of lady finger cookies
1/4 cup of dried raspberry powder (freeze dried raspberries; blitzed and sifted into a fine powder)
Grab a 9x13 Pyrex dish (or any similarly sized pan). I used a disposable 9x13 tin since I was bringing this to a friend’s house—but truly, any dish will work. Set it aside.
In a shallow bowl, whisk together 2 teaspoons of matcha powder with ¾ cup of warm water until smooth and free of clumps. Set it aside to cool—you’ll want it at room temperature before using it.
In a stand mixer fitted with the whisk attachment, whip the heavy cream on medium-high speed. Once it begins to stiffen, add the vanilla paste and continue whipping until light and fluffy. You’re making whipped cream here! Set aside.
In a large mixing bowl (big enough to hold everything later), beat the egg yolks and sugar together using a hand mixer or whisk. Keep going until the mixture becomes pale, thick, and creamy.
Add the mascarpone and mix again until fully smooth and incorporated.
Gently fold the whipped cream into the mascarpone mixture using a spatula. Mix until just combined—don’t overmix or the cream may deflate.
Assembly time:
Quickly dip each ladyfinger into the cooled matcha (one at a time) and place them in a single, even layer on the bottom of your prepared dish.
Spread half of the mascarpone-whipped cream mixture over the ladyfingers, smoothing it out evenly.
Lightly sift raspberry powder over the cream layer using a fine mesh sieve.
Repeat with another layer of matcha-dipped ladyfingers and then top with the remaining cream mixture. Smooth the surface.
Finish with a final dusting of raspberry powder on top.
Cover the dish and refrigerate until ready to serve. For best results, make this in the morning or the night before you plan to eat it—this gives the flavors time to meld beautifully.
